We know now that George Minkowski, the man Jack talked to, was the communications officer of the Kahana, a freighter commissioned by Charles Widmore (Ben tells us that in "The Other Woman"), including a team of five that was recruited by Matthew Abaddon.
As for who was specifically on the Freighter when Jack called, the crew/passengers include: Frank Lapidus, Daniel Faraday, Charlotte Lewis, Miles Straume, Keamy, Omar, Ray (The Doctor), Regina, George Minkowski, The Captain, at least three redshirt crewmen and "Ben's Man" on the boat, who may or may not be one of the previously mentioned people.
